Produced at the place of traditional cheesemaking, Trikala, with sheep’s and goat’s milk, which is collected from small dairy farms where their nutrition is based exclusively on the flora of the pastures of the area. It ripens for three months and is conserved in natural brine. Buttery flavour with good aftertaste.
