Recipe: Argiro Barbarigou
Pork rolls with traditional cheese Divanis and mustard sauce
6 thin slices pork
200 grms traditional cheese Divanis
Salt - Pepper
1/4 cup olive oil
1/4 cup dry white wine
3 peppers of different colours
2 tablespoons of mustard
2 tablespoons balsamico with honey
Puree for serving
Green salad for serving
Open the slices of pork and salt and pepper them. Cut the cheese into sticks. Stuff its piece of meat with the cheese and roll it. Fix it with the toothpicks.
Heat the oil. Brown the rolls. Add the peppers. Leave for 4-5'. Add wine. Cover and cook in low heat until the liquids are gone.
Mix in a bowl the mustard with the balsamico and the thyme. Pour over the rolls.
Serve with the puree and the salad.
